The best days of all are the days when you come home to freshly made dinner. All you have to do is sit, chew and swallow. Life’s good.

You’ve probably noticed a bit of a pattern here. The trend is that of meat + veggies – a classic formula.

Here, there’s lamb rack cooked to crispiness, with a fresh salad of capsicum (bell pepper for Americans), red onion, feta, coriander and courgettes.

The courgettes were boiled, and the rest of the veggies rested in some vinegar in lieu of cooking. Mixing through the cooked courgettes = steam for further cooking and an interesting mix of temperatures.

    Life is all about good food! It is what life is all about. When we travel, the most enjoyable part of travel is tasting the different foods. My cooking ability is limited, but I am real good making salads. Your dinner looks delicious!

    This looks delicious! It’s good that T can cook and you two can trade off kitchen duty. G and I do that (and then the other gets dishes duty).

    Drool…… That’s one thing we don’t eat that much: lamb. Thinking that’s going to have to change.

    Mmmm, looks very appetizing.
    I try to abide by that rule in all of my meals. Protein and veggies. It’s kept me healthy.
    I love a bit of cheese and cranberries in my salads for texture and a pop of flavor.
